We offer a wide variety of delicious specialty sausages. Some are seasonal, but most are usually available.

    This is Cajun sausage, but HOTTER and smoked. Add to Dirty Rice and other New Orleans type dishes.
    Apple Raspberry
    Our most popular sausage, an incredibly aromatic sausage made with organic raspberry puree, organic apple sauce, heavy cinnamon, nutmeg cloves and all-spice.
    Apple Cherry
    This one is like Apple Blackberry but just a little milder and we use cherry puree.
    Apple Blackberry
    Similar to Apple Cherry with a deep subtle flavor.
    An authentic German recipe of pork and veal with buttermilk, nutmeg, coarse black pepper and more. Boil in beer first then barbeque - Yum, Yum!
    British Bangers
    An authentic English recipe.
    Phenomenal. The texture and flavor of this sausage are indescribable. It's hot, but man is it good!
    Chorizo - Pork
    This is a unique recipe using pork and a special Mexican tequila, Casta Negra.
    Cranberry Pork
    Only made twice a year and it absolutely fabulous in stuffing. We use organic cranberries and cinnamon.
    Elk Opie
    Elk mixed with pork, beef, heavy beer, garlic, and light heat with our barbeque spice. Try it on the BBQ.
    Beef, pork, beer and spices. Use with everything from stuffed cabbage to tacos; great as hors d'oeuvres.
    Herbs and Cheese
    Fire-roasted tomato-basil-garlic with a blend of sharp cheddar and other cheeses.
    Hot Italian
    Lots of garlic, crushed fennel, oregano and basil. Simply delicious. Pasta, anyone?!
    Jalapeno Cheddar Cheese
    This sausage is the bomb! Pork, garlic, jalapenos, sharp cheddar cheese and a little heat. Awesome as an hors d'oeuvre.
    Wonderful smoked Polish-style sausage with juniper berries, mustard powder and loads of garlic.
    Linguisa - mild (authentic Portuguese recipe)
    Coarsely ground with big chunks of meat. Taste cumin, allspice, heavy garlic, cinnamon and red wine. Marinated and smoked; reheat on the barbeque for about ten minutes.
    Linguisa - hot (Portugese style)
    Hot and delicious. Try some on the BBQ!
    Louisiana Hot Links
    Super-tasty, hot and spicy smoked Cajun-style sausage made with pork and beef.
    Opie (Beef, Pork and Elk)
    With heavy beer and garlic, light heat. We recommend that you barbeque this and serve as an appetizer.
    Heavy garlic but not so much that only Poles with like it. Twice a year (Easter and Christmas) we make a special batch with LOTS of garlic, marjoram, salt and pepper.
    Sweet Italian
    Made with pork, heavy garlic, crushed fennel, salt and pepper, oregano, basil and other spices - no anise. Use it with spaghetti, as a pizza topping, on the barbeque or for breakfast.
